Winemaker Federico Fossati, is a native to Veneto and is highly committed to allotting the necessary time to produce wines of structure, complexity, and ageability. Allowing the wines a minimum of 30 months of the lees, Corte Aura’s sparklings surpass the local requirements. For this reason, the sparklings are able to achieve full development. To capture the spirit of Corte Aura, the symbol of the turtle is used representing the slow, intentional pace at which the wines are produced. The Franciacorta Inse Pas Dose is a delicate blend of Pinot Noir and Chardonnay brought together in a way that highlights a rusticness of the Old World with polished wine making of modern times. Having spent time on the lees, aromas of white flower, honeysuckle, and butterscotch wafts from the glass. There is an unmistakable breadiness that is like walking into a bakery full of fresh pastries. The palate is moussey and smooth with flavors of bruised apple skin and yeast that segways to a bitter finish of raw nuts. A fresh, clean acidity carries out a long, complex finish. This is a great pairing for a variety of dishes including mature cheeses, cold meats, poultry, fruit salads, and light pastas, or drinks well all by itself.
