Founded by George Piradashivili in the early 2000s in the village of Vardisubani, they are now one of Georgia's most famous wine tourism destinations. Winiveria produces a wide variety of Kakheti wines, in limited quantities, both in European and traditional style with native grape varieties such as Kisi, Khikhvi, Kakhetian Mtsvane, Rkatsiteli, and Saperavi. The grapes come from local vines aged between 20 and 25 years. Winiveria Kisi is a white wine produced in European style, made from grapes of the Kisi variety that grow in eastern Georgia, in the Kakheti wine region. Fermentation lasts an average of two weeks at a controlled temperature of 13-15 ° C. This soft white wine with a young and fresh character displays a vibrant golden yellow color and aromas of quince, pear, lime, and green apple. They hit the balanced acidity and round taste. This makes Winiveria Kisi a perfect summer wine, to be served at a temperature of 10-12ºC, in combination with fish, cheese, mushrooms, and salads.
