Drink it now or cellar for 10-15 years. It is recommended to decant the wine for a half an hour. The Heitz family has cultivated vines in Burgundy since 1857, but traditionally sold its fruit to the négociant Joseph Drouhin. After graduating in Oenology in 2011 and taking the reins of the company, Armand Heitz started producing wines with the 2012 vintage. The Domaine currently covers 4 hectares, spread over 5 appellations in the Côte-de-Beaune. The vineyards, under the guidance of Ludovic Pierrot (of Domaine Leflaive), are organically cultivated and more recently viticulture has been carried out in full compliance with biodynamic standards. Yields are naturally contained at low levels and the grapes are harvested manually. The wines, both red and white, are fermented in wood with whole bunches intact. They are then racked into barrels for an aging period of 11 months. In the glass, the wine has a light yellow color. The nose is fresh with aromas of white flowers, honeysuckle, white peach, and slightly smoky notes. On the palate, it has a superb roundness and an impressive balance. Far from the stereotype of opulent and aromatic Chassagne-Montrachet, this great wine is taut and mineral, of great purity and brightness. It is ready to be drunk now but may benefit in terms of complexity from further refinement in the bottle. The finish is pure and tasty. Enjoy it with baked bluefish, prawns, and Comte cheese.
