The winery has a rich history dating back to 1831 and is currently run by Albéric Bichot, a sixth-generation winemaker who has been at the reigns since 1996. Albert Bichot has vineyards in some of Burgundy’s most precious appellations, including Chablis, Gevrey-Chambertin, and Pommard. This wine hails from one of the winery’s hidden gems, an AOC village called Domaine du Pavillon, situated just south of Pommard. The Pinot Noir grapes are harvested from Clos des Ursulines, a 4-hectare plot decorated with ancient pine trees. This wine has a richly scented nose, revealing notes of red and black fruits, such as cherry and blackcurrant, along with hints of fig and fruitcake. For a Pinot Noir, this Pommard wine is notably full-bodied, with a succulent, round mouthfeel and a slight tannic bite. Look for a medley of red fruits on the palate, with hints of various spices, chocolate, and classic Pinot notes of mushroom and forest floor. Thanks to its notable tannic quality, there is plenty of room for ageing with this bottle. After some years, you may discover some tertiary notes of leather and coffee. The finish is velvety, and this wine makes for smooth drinking overall. It will be excellent paired with delicate red meat dishes, red wine sauces, or tender bites of gamey meat.
