It is a family business with a centuries-old tradition, now led by Alberic Bichot, the sixth generation of the family. Today, the company owns 6 estates distributed throughout Burgundy. All estates cultivate their vineyards with sustainable practices. Domaine Adélie, which takes its name from Alberic Bichot's daughter, born in 2003, was purchased in 2013. The estate, located in the Mercurey area, consists of 2 parcels for a total of almost 8 hectares of vineyards. The Aligoté grapes come from the Champ Renard plot, planted on sandy loam and clayey-limestone soil and located at the entrance to the village of Mercurey. From an oenological point of view, the grapes are grown with the same approach as Chardonnay. The finished wine is aged in thermoregulated stainless steel tanks for 8 months. Domaine Adelie's Bourgogne Aligote Champ Renard is a fresh and easy-drinking wine, which reveals a delicate and pleasant aromatic profile with floral and fruity aromas. In the mouth, it is round and consistent, with a well-balanced acidity and a pleasant finish of dried fruit. Perfect as an aperitif, with salads and light vegetarian dishes.
