Founded in 1929 and later bought in 1977 by Brigitte and Jean-Pierre Fayard the Château Sainte-Marguerite, the old glory of the Var vineyards, is one of the famous classified growths of Provence. The 150 hectares are cultivated according to the principles of Organic Agriculture; a respect for nature that Brigitte and Jean-Pierre now share with their 4 children. The Sainte-Marguerite vineyard is made up of poor, infertile schist soils. Forced to draw water from very deep, the vine suffers, leaving the possibility to the winegrower to seek high maturities without losing balance or freshness. This water “stress” will increase the concentration of sugar in the harvest. Thus, the estate's wines are naturally sweet and very expressive, with a typical aromatic framework that preserves the raw flavors of the juices. This Sainte Marguerite rosé wine, certified organic and Vegan, is characterized by a fruity and gourmet nose. In the mouth it reveals a great finesse with flavors of strawberries and juicy pomelo. The finish is long with slightly saline notes. A rosé wine of great freshness and a beautiful generosity on the whole. It is served at 10 ° C as an aperitif, with raw vegetables with a nice anchoïade, with grilled Mediterranean fish or Vietnamese cuisine.
