Wine has been made in the Upper Galilee region for at least two thousand years, and the combination of high altitude vineyards and a mild Mediterranean climate make it the ideal choice for premium winemaking to this day. Galil Mountain Winery was founded in 2000 with a vision to produce top quality wines inspired by the local terroir and proven international grape varieties. Yiron is Galil Mountain’s flagship winery and is crafted from prime vineyards in the Upper Galilee. The Bordeaux-style blend is primarily composed of Cabernet Sauvignon along with a smaller amount of Merlot and a dash of Syrah and Petit Verdot. After the fruit is harvested it is fermented in stainless steel tanks and then aged in French oak barrels for 16 months before bottling. The result is a powerful full-bodied wine with abundant aromas of cassis, blackberry and crushed plums as well as hints of cloves, cinnamon, and sweet licorice. On the palate there is a smooth texture, firm tannins and well-built structure which will help this wine to age gracefully in the cellar over the next 8-10 years.
