Cellar for up to 5 years. Serve chilled. The hardworking Brunelli family have been farming land around the village of San Pietro in Valpolicella since at least the 18th century. They were originally workers on the estate which today bears their name, slowly saving enough money to purchase individual plots on the estate until they could start making their very own wines. These days the estate’s wine is made by Alberto Brunelli with his parents Luigi and Luciana also involved in the family business. This elegant and innovative rosé sparkling wine is named after its short maceration period which helps to extract the delicate salmon pink colour and seductive fruity flavours from the skins. The wine is made using the Charmat method, traditionally used to make Prosecco, which creates lots of small bubbles and a crisp, clean flavour profile. To make it extra special and unique, the family have chosen to use classic local grape varieties including Molinara which is little-known outside of the Veneto region and to bottle without any dosage or added sugar. This creates a very dry and refreshing sparkling wine that is ideal for enjoying as a chilled aperitif or partner for pasta and risotto dishes as well as fried zucchini flowers and fresh burrata cheese.
