Back in 1608 Hieronymus Manicor began to build on land which had been given to him by the emperor as a reward for his loyal service, laying the foundations of the estate which exists to this day. Manicor is located in Italy’s northeastern South Tyrol region which is famous for its mountainous landscapes and unique Austrian-influenced culture and gastronomy. Today the winery specialises in producing delicious and approachable wines grown in their stunning Alpine vineyards. This elegant Sauvignon Blanc begins life in the estate’s Liebeneich vineyard at Terlan which is a south-west facing slope that sits at 300 metres above sea level. Conditions here are perfect for making premium white wines thanks to the breezy and moderate climate and the well-draining soils which are high in minerals. This helps to retain plenty of freshness and aromatics in the Sauvignon grapes, with the fruit harvested only when it reaches full ripeness. In the winery the fruit is destemmed and macerated on the skins for 12 hours to extract flavour and colour. The juice is allowed to ferment spontaneously using wild yeasts present in the environment. The young wine is then matured for 9 months in oak barrels on the fine lees to add extra complexity and hints of spice to the bold tropical and orchard fruit flavours.
