Yatir was founded in 2000 when Carmel, Israel’s oldest and largest winery, realised the exceptional potential of vineyards planted in the Yatir Forest on the edge of the Negev Desert. Planted against the advice of scientists who believed a forest could not survive here, the forest and the vineyards are now thriving and have helped to literally turn the desert green. Conditions here are ideal for premium winemaking thanks to the hot summer days and cold nights. This ensures a high daily temperature range during the growing season which ensures the grapes have a great balance between ripe fruit flavours and plenty of freshness and aromatics. This stunning Syrah is grown in top quality vineyard sites in Yatir which benefit from limestone soils and up to 820 metres of altitude. Once in the winery the grapes are vinified and the young wine is then aged in neutral used oak barrels for one year followed by two years of ageing in the bottle. The result is a dark and handsome Syrah with luscious dark cherry, cassis and bitter licorice notes, a generous full body and firm tannins that will respond well to additional cellaring.
