Founded in 1896 by agricultural engineer Marcel Ott, Domaines Ott has been making elegant Provencal rosés since 1912 and the wines are now made by the fourth generation of the family, cousins Jean-Francois Ott and Christian Ott. Their “By Ott” label is produced in the newly-built cellar of Château de Selle with fruit sourced from exceptional vineyards belonging to de Selle and Clos Mireille which are particularly known for their elegant and aromatic grapes. This cuvee is a delicate blend of Grenache and Cinsault along with a drop of Syrah and Mourvedre for extra complexity and character. The two estates produce fruit with markedly different qualities; Clos Mireille’s proximity to the sea helps lock in plenty of freshness and floral character whereas de Selle is set on limestone slopes which gives more texture and ripe fruit flavours. The fruit is all carefully harvested by hand and sorted on arrival at the winery to maximise quality. The must is slowly fermented in temperature-controlled tanks with a brief ageing to settle the wine before bottling. Bursting with bright red berries, herbal notes and hints of lavender and earthy herbs, this is a fabulous wine to serve as an aperitif or refreshing drink for a summer afternoon by the pool.
