Decant for 3 hours prior to serving The Chateauneuf Du Pape Reserve Rouge is made from the oldest vines on the Domaine De La Vieille Julienne estate, and is generally the most powerful and heady of the wines they make. Intense aromas of raspberry pate de fruit, spicecake, anise, and exotic spices are followed by cooked plum, lavender, graphite, and lingonberry compote flavors. The finish is tinged with black tea notes, and while a touch austere now, will be an absolutely beautiful wine in 5, 10, 15, or 20 years time. Braised meats or stewed lamb shoulder, slow cooked beef briskets, or even classic French bistro dishes like stewed rabbit cassoulet would be perfect with a powerful and rich cuvee like this Chateauneuf Du Pape Reserve. Planted in 1904, the Grenache vines for this wine are grown organically and biodynamic principles are followed year-round. Winemaker Jean-Paul Daumen uses manual labor for almost all winemaking practices: hand harvesting, hand punch downs, and temperature control not using computers, but by hand. Only bottled in the best years when Jean-Paul feels it is deserved, this Reserve sees a small amount of time in a combination of large neutral oak casks and small neutral oak barriques.
