Best enjoyed now! Decant up to 30 minutes, if desired. 100% Rolle. Pretty pale yellow with fine flashes of green in the glass. Stone fruit aromas laced with herbaceous notes of honey, mint and wild garlic. This Vermentino is luscious and balanced with lovely clarity. The delicious floral and fruity nose echo its layers on the palate. White flowers, ripe white peaches, apricot, and pineapple blend seamlessly with the hints of white spices and citrusy lemon rind that carry through long after the powerful finish. Enjoy this white wine chilled at 7°C, as an aperitif or especially with fish and crustaceous fare. Other agreeable pairings include salads, stone fruits, grilled stuffed squash blossoms and soft cow’s or goat’s milk cheeses. Château d’Esclans was acquired by Sacha Lichine in 2006. A long-time friend and co-worker, Patrick Léon, is the winemaker. His experience is renowned and his cuvées only get better with time. The grapes for this wine were hand-harvested at night. The fruit is not macerated. Instead, the destemming and a light crushing in cold temperatures happen right after harvest to avoid any coloration of the wine. It is then fermented in stainless steel vats and filtered before bottling. The Côtes de Provence is the largest appellation in the wine region of Provence in France. It covers 20,250 hectares and includes 84 communes and the 3 sub-appellations (named after communes) of Frejus, Sainte-Victoire, and La Londe. The main output of wine in the region is rosé.
