The Bamford family successfully converted their farm in the UK to organic agriculture in the 1970s, and while looking for a new home in Provence they fell head over heels in love with the charming Chateau Leoube. They soon converted the estate’s 65 hectares of vineyards and olive groves to organic farming, and in 2000 they teamed up with their neighbour’s son, Romain Ott, who today makes their delicious rosé wines. This beautiful sparkling wine is a relatively new project which uses Cabernet Franc and Cinsault grapes grown on schist and clay soils close to the sea. This positioning is ideal for making fresh and elegant sparkling wines thanks to the cooler nights and sea breezes which help moderate temperatures even during the hot summers. All of the grapes are harvested by hand to maximise quality and the fruit is immediately transported to the winery and put in temperature-controlled tanks. The first fermentation takes place in stainless steel tanks followed by a second fermentation in the bottle. This type of winemaking is known as the “traditional” or “Champagne” method since it’s the same process used by France’s most famous sparkling winemakers. The wine ages on the lees for 9 months and is then bottled, crafting a light, elegant sparkling wine that’s bursting with ripe red berries, pomegranate, blood orange and zesty citrus notes.
