Baia's Wine company was established in 2015 when the Abuladze family entered a competition for local agricultural startups and won a grant of approximately USD 2,000, which they used to implement the cellar. Before that, they were producing grapes for sale. Since 2015, the company has been managed by Baia and her siblings. They have remodeled the entire production structure and concentrated the company's resources on organic winemaking techniques and the cultivation and promotion of native vines. This Orange wine is produced with the indigenous Tsitska grapes, grown around the village of Obcha, in the Imereti wine region of western Georgia. The grapes are macerated in Qvevri for about a month on a part of their skins (about 30%). After maceration, the must is left to ferment in amphorae according to ancient Georgian methodologies. The resulting wine has an amber color and a strong aromatic bouquet. The nose reveals an aroma of persimmon mixed with citrus and stone fruit. In the mouth, it is silky and soft with a medium body and a long and pleasant finish. Its roundness makes it perfect in combination with Chicken Caesar salad, seafood or some fresh cheeses. Serve it at 10-12 ° C.
