Cellar for up to 5 years. Serve well chilled. The Antech family have been crafting stunning sparkling wines for over six generations, but Limoux’s sparkling wine heritage dates back to at least 1544. Today the family business is run by Francoise Antech who is widely hailed as one of France’s finest female winemakers. As well as continuing to make excellent traditional-style Cremant de Limoux, Francoise is also experimenting with new ideas including embracing unpopular varieties like Mauzac which have largely fallen out of fashion. Francoise created her M Le Mauzac collection of sparkling wines to show off the capabilities of the Mauzac grape which is perfectly adapted to the terroir in Limoux and is one of the most resistant grapes to climate change. Each of the four wines in the collection captures a different aspect of Mauzac. This vintage sparkling wine showcases Mauzac’s ability to age beautifully in the cellar with the young wine spending 36 months ageing on the lees in the bottle before it is disgorged. Made according to the traditional method which is also used for Champagnes, this cuvee is an excellent alternative to Champagne for family dinners or special occasions. The nose is bursting with hints of green apples, brioche, French pastries and vanilla spice while the first sip reveals a smooth texture, delicate bubbles and bright freshness on the finish.
