Drink now or cellar for up to 5 years. Serve chilled. This gorgeous dessert wine is the traditional produce of Lipari, a small volcanic island off the north coast of Sicily. With 20 acres dotted across the island, Tenuta di Castellaro is the island’s largest producer and seeks to work in harmony with nature wherever possible by farming their vineyards organically and using gravity instead of pumps to move the wine around the winery. To create this delicious sweet wine the indigenous Malvasia delle Lupari grapes are grown at an altitude of 150 metres above sea level and harvested by hand. The grapes are then left out in the sun to dry out for 15 days to concentrate the flavours and sugars. The fruit is pressed and then allowed to ferment naturally in oak barrels over the winter. After 12 months of ageing in the barrel the wine is then bottled and aged for another 12 months before release. Lusciously sweet with perfumed notes of dried figs, apricots, and honeysuckle, this elegant Malvasia is best served chilled in a small glass as an accompaniment or alternative to dessert. On the palate there’s a rich sweetness balanced by a gentle streak of acidity and a long finish reminiscent of flower nectar and dried fruit.
