Carmel holds a special place in Israeli viticultural history as the first modern winery founded by the pioneering Baron Edmond de Rothschild in the 1890s. To kickstart the project Edmond imported vine cuttings from France which are today used all over the country and also brought in winemaking expertise from Bordeaux. This legacy has profoundly impacted Israel’s wine industry, and Carmel is today the country’s largest winery producing everything from light and elegant reds to powerful Bordeaux-style red blends. Their gorgeous Appellation Cabernet Sauvignon is part of a series designed to show off the complexity and diversity of Israel’s terroirs. Grapes for this cuvee are sourced from the Upper Galilee where Carmel winery is based. Once in the winery they are fermented and then the young wine is matured in French oak barrels for 12 months. Succulent blackcurrant, cassis and hints of eucalyptus define the nose while the palate offers a generous full body, firm tannins and a long finish. Intense crushed wild berry notes dominate the flavour profile as well as aromatic dried herbs, violets and subtle winter spice notes from the oak ageing. Great with red meat dishes or hearty vegetarian recipes like aubergine parmigiana or fragrant stews.
