Carmel is Israel’s oldest and largest winery thanks to the vision and support of Baron Edmond de Rothschild who founded the estate in the 1980s. Edmond imported vine cuttings and winemaking expertise from France and this legacy has continued today with the winery crafting stunning Bordeaux-style wines with a unique Israeli character. This big and beautiful Shiraz is a single vineyard wine sourced from the prized Kayoumi plot which sits close to the winery between Miron and Kadita in the Upper Galilee. The vines here are planted on a south-east facing slope at 750 metres above sea level which helps to lock in freshness and plenty of delicate aromatics. The grapes are harvested at night to ensure optimal quality and following fermentation the young wine is aged in French oak barrels for 15 months before bottling. As soon as you pour out a glass you’ll notice the inky crimson hue and intense aromas of cassis, bilberry and dark cherry along with spiced notes from the oak ageing. Full bodied and well-structured with plenty of ripe tannins, this is a great wine to drink with red meat dishes or to keep in the cellar for another decade or so.
